Turkey Pepperoni Pizza-Dilla

This quick, healthy snack is a game changer for those after-school or pre-dinner hunger pangs!

Ingredients:
1 Mission tortilla (look for high-fiber if desired)
2–3 tbsp marinara or pizza sauce
½ cup shredded mozzarella cheese
6–8 slices turkey pepperoni
¼ cup sliced red bell pepper
Sprinkle of Italian seasoning
Pinch of red pepper flakes (optional – if your kids like a little heat!)
Olive oil or cooking spray for the pan

Directions:
1) Lay your tortilla flat and spread marinara over half of it.
2) Layer on mozzarella cheese, turkey pepperoni, sliced red pepper, Italian seasoning, and red pepper flakes.
3) Fold the tortilla in half to form a quesadilla.
4) Heat a nonstick pan over medium heat with a little olive oil or cooking spray.
5) Cook for 2–3 minutes per side, until golden brown and the cheese is melty.
6) Let cool slightly, then slice into triangles like a pizza and serve warm!
