Mango Salsa Beef Taco Bowl

Ingredients:

Mango Salsa:
1 ripe mango, diced
¼ cup red onion, finely chopped
½ jalapeño, finely chopped (optional)
Juice of 1 lime
2 tbsp fresh cilantro, chopped
Pinch of salt
Optional: ¼ cup diced cucumber or avocado for texture

Beef Bowl Ingredients:
½ lb lean ground beef
1 tsp olive oil
1–2 tsp taco seasoning (or use chili powder, cumin, garlic powder, salt)
½ cup cooked rice (white, brown, or cilantro lime)
½ cup black beans, drained and rinsed
1 handful shredded romaine or cabbage slaw
¼–½ avocado, sliced
Optional toppings: Greek yogurt or sour cream, crushed tortilla chips, shredded cheese

Directions:
1) In a skillet, heat olive oil and cook ground beef until browned. Add taco seasoning and a splash of water; stir to coat and simmer for 1–2 minutes.
2) In a bowl, layer rice, black beans, and greens.
3) Add the cooked taco beef and sliced avocado.
4) Top with fresh mango salsa and any additional toppings you love.
5) Serve immediately or prep ahead for easy lunches!
