Hidden Veggies Pasta

Kid-approved, veggie-packed, and ready in under 30 minutes.

Ingredients:
1 medium carrot, peeled and chopped
1 small red bell pepper, chopped
1 zucchini, chopped
1/2 small onion, chopped
2 cloves garlic, minced
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt and pepper to taste
1/4 cup water
1 jar Michael’s of Brooklyn pasta sauce
1/2 cup reserved pasta water
12 oz pasta of choice (penne, rigatoni, etc I used Barilla Protein.)
Grated Parmesan for topping


Directions:
1) In a pan, heat olive oil over medium heat. Add carrots, red pepper, zucchini, onion, and garlic.
2) Season with garlic powder, Italian seasoning, salt, and pepper. Sauté until veggies start to soften (about 8 minutes).
3) Add 1/4 cup water, cover, and let steam for another 3–5 minutes until veggies are fully soft.
4) Transfer mixture to a blender or use an immersion blender to puree until smooth.
5) In the same pan, pour in Michael’s of Brooklyn pasta sauce and the blended veggie mixture. Stir and season to taste.
6) Add a splash of reserved pasta water for creamier texture.
7) Toss in your cooked pasta and top with Parmesan. Serve warm!
