Mediterranean Power Bowl
A fresh, flavorful, and nourishing lunch or dinner idea.
Ingredients:
2 cups Earthbound Farm baby kale
2 cups Earthbound Farm spring mix
1/2 cup cooked quinoa
1/3 cup air-fried or roasted chickpeas
1/4 cup cherry tomatoes, halved
1/4 cup cucumber, chopped
2 tbsp red onion, thinly sliced
2 tbsp crumbled feta
A few kalamata olives, sliced
Optional: avocado slices
Dressing:
2 tbsp olive oil
Juice of 1/2 lemon
1 garlic clove, minced
1/2 tsp dried oregano
Salt and pepper to taste
Directions:
1) To air fry chickpeas: Toss rinsed chickpeas with a little olive oil, salt, paprika, and garlic powder. Air fry at 400°F for 12–15 minutes or until crispy.
2) In a large bowl, combine baby kale and spring mix.
3) Top with cooked quinoa, tomatoes, cucumber, red onion, olives, chickpeas, feta, and optional avocado.
4) In a small jar or bowl, whisk together the dressing ingredients and drizzle over the bowl.
5) Toss gently or serve layered. Enjoy immediately!
