Mango Coconut Chia Pudding

I went to bed excited to wake up and eat this!

Ingredients:
For the mango purée:
1 ripe mango, peeled and chopped
1–2 teaspoons agave nectar (adjust to taste)
Juice of ½ lime

For the chia pudding:
½ cup canned lite coconut milk
½ cup unsweetened almond milk
2 tablespoons chia seeds
1 tsp vanilla extract

Optional for topping:
Diced fresh mango
Toasted coconut flakes

Directions:
1) In a blender, combine the mango, agave nectar, and lime juice. Blend until smooth and set aside.
2) In a small bowl or jar, stir together the coconut milk, almond milk, and chia seeds.
3) Let sit for 5 minutes, then stir again to prevent clumping.
4) Cover and refrigerate for at least 4 hours or overnight, until thickened.
5) When ready to serve, layer the mango purée on top of the chia pudding. Add any extra toppings if desired.
6) Enjoy chilled!
