Feta Fried Egg on Sourdough with Tomato
Crispy, creamy, salty, and fresh—perfection on toast!
Ingredients:
1 large egg
¼ cup crumbled feta cheese
1 tsp olive oil or butter
1 slice sourdough bread, toasted
2 slices beefsteak tomato
Red pepper flakes (optional)
Honey or hot honey (optional, for drizzle)
Fresh basil or arugula (optional, for extra flavor)
Directions:
1) Heat a nonstick pan over medium heat and add feta cheese in an even layer.
2) Once the feta starts to sizzle, crack an egg directly on top of it.
3) Cover the pan with a lid and cook for about 2-3 minutes until the whites are set but the yolk is still slightly runny.
4) Toast your sourdough bread while the egg is cooking.
5) Place the feta-fried egg on top of the toasted sourdough.
6) Layer with beefsteak tomato slices and sprinkle with a little more salt and red pepper flakes.
7) Drizzle with honey or hot honey for that perfect sweet-savory bite.
8) Add some fresh basil or arugula on top if you want an extra herby kick.
