Mediterranean Tuna Chickpea Salad (High-Protein & Heart-Healthy)

Ingredients

For the Salad

  • 2 (5-ounce) cans tuna, drained

  • 1 (15-ounce) can chickpeas, drained and rinsed

  • 1½ cups cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ cup red onion, finely diced

  • ¼ cup crumbled feta cheese

  • ¼ cup Kalamata olives, sliced

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh mint, chopped

Lemon Herb Dressing

  • 3 tablespoons extra virgin olive oil

  • Juice of 1 lemon

  • 1 teaspoon Dijon mustard

  • 1 teaspoon dried oregano

  • ½ teaspoon sumac (optional, but highly recommended)

  • Salt and black pepper, to taste

Instructions

  1. In a large bowl, combine the tuna, chickpeas, cucumber, tomatoes, red onion, feta, Kalamata olives, parsley, and mint.

  2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, oregano, sumac, salt, and pepper.

  3. Pour the dressing over the salad and gently toss until everything is evenly coated.

  4. Let the salad sit for 10–15 minutes before serving to allow the flavors to develop.

  5. Enjoy immediately or refrigerate for meal prep throughout the week.
