Mediterranean Street Corn Salad

Made with sweet charred corn, creamy Greek yogurt, feta cheese, fresh herbs, and a squeeze of lemon, it's the perfect recipe for BBQs, weeknight dinners, or meal prep. Serve it with pita chips, alongside grilled chicken, or enjoy it straight from the bowl.
Ingredients
4 ears fresh corn, grilled or charred (about 3 cups corn kernels)
¾ cup plain Greek yogurt
2 tablespoons mayonnaise
½ cup crumbled feta cheese
¼ cup finely diced red onion
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 garlic clove, grated
Juice of ½ lemon
1 tablespoon extra virgin olive oil
1 teaspoon smoked Paprika
Salt and black pepper, to taste
Optional
2 tablespoons chopped Kalamata olives
Directions
Step 1: Grill or char the corn until lightly browned. Allow it to cool slightly, then cut the kernels off the cob.
Step 2: In a large bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, olive oil, garlic, Smoked paprika, salt, and black pepper until smooth and creamy.
Step 3: Fold in the charred corn, feta cheese, red onion, parsley, dill, and Kalamata olives (if using).
Step 4: Transfer to a serving bowl and top with additional feta, fresh herbs, and a sprinkle of Aleppo pepper. Serve immediately or refrigerate for 30 minutes to let the flavors come together.
Tips
Fresh grilled corn gives the best flavor, but frozen corn works well too. Simply sauté it in a skillet until lightly charred.
This salad tastes even better after chilling for about 30 minutes.
Serve with pita chips, grilled chicken, fish, or in lettuce wraps.
