Ingredients
2 English cucumbers, thinly sliced
2 tablespoons low-sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
1 teaspoon chili oil (optional)
2 teaspoons sesame seeds
2 green onions, thinly sliced
Directions
Step 1: Thinly slice the cucumbers and place them in a large bowl or container with a lid.
Step 2: Add the soy sauce, sesame oil, rice vinegar, chili oil (if using), sesame seeds, and green onions.
Step 3: Toss well or secure the lid and shake until the cucumbers are evenly coated.
Step 4: Let the salad sit for 10–15 minutes before serving to allow the flavors to develop. Enjoy immediately or refrigerate until ready to serve.
Tips
English cucumbers work best because they stay crisp and have fewer seeds.
Adjust the chili oil to your preferred spice level.
This salad pairs well with grilled chicken, salmon, rice bowls, or wraps.
