Easy CAVA-Inspired Mediterranean Chicken Bowl

This easy CAVA-inspired Mediterranean chicken bowl is fresh, filling and perfect for a quick lunch. It combines fluffy basmati rice, rotisserie chicken, fresh vegetables, hummus and homemade tzatziki for a balanced meal you can make at home.

Ingredients

For the bowls

  • 2 cups cooked basmati rice

  • 2 cups shredded rotisserie chicken

  • 1 cup chopped cucumber

  • 1 cup chopped tomatoes

  • ¼ cup crumbled feta cheese

  • ¼ cup Kalamata olives

  • ⅓ cup hummus

  • Fresh dill or parsley for serving, optional

  • Lemon wedges for serving, optional

For the homemade tzatziki

  • 1 cup plain Greek yogurt

  • ½ English cucumber, grated

  • 1 tablespoon fresh dill, finely chopped

  • 2 garlic cloves, grated

  • 1 tablespoon extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • Sea salt to taste

Instructions

  1. Squeeze the grated cucumber firmly with clean hands or a kitchen towel to remove as much water as possible.

  2. Mix the cucumber with the Greek yogurt, dill, garlic, olive oil, lemon juice and sea salt. Refrigerate while assembling the bowls.

  3. Divide the cooked basmati rice between two bowls.

  4. Add the shredded chicken, cucumbers, tomatoes, feta, olives and hummus.

  5. Finish each bowl with homemade tzatziki and fresh dill, parsley or lemon if desired.

Serve immediately or prepare the ingredients separately for an easy meal-prep lunch.
