Maple Dijon Pork Chop Sheet Pan Dinner

Double the glaze to use as a marinade for chicken or shrimp!

Ingredients (4 servings):
4 pork loin chops (boneless or bone-in)
2 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp maple syrup (or honey)
1 tsp apple cider vinegar (or lemon juice)
1 large sweet potato, diced
2 cups Brussels sprouts, halved
1 small red onion, sliced (optional for color)
1 tsp garlic powder
1 tsp thyme
Salt & black pepper

Directions:
1) Preheat oven to 400°F and line a baking sheet with parchment paper.
2) Whisk olive oil, Dijon, maple, and vinegar into a glaze.
3) Toss sweet potatoes, Brussels sprouts, and onion with half the glaze, garlic powder, thyme, salt, and pepper. Spread evenly on the sheet pan and roast for 15 minutes.
4) Add pork chops, brush with remaining glaze, and roast another 12–15 minutes, flipping halfway, until pork reaches 145°F.
5) Serve straight from the pan with extra glaze drizzled on top.
