Garlic Shrimp Salad with Honey Mustard Dressing
This delicious dressing works great on chicken & in grain bowls so double it and use it in other recipes for 3–4 days!
Ingredients (2 servings):
Shrimp:
1 lb raw shrimp, peeled & deveined
1 tbsp olive oil (Filippo Berio)
2 garlic cloves, minced
Salt & black pepper, to taste
Salad Base:
4–5 cups mixed greens (spinach + spring mix, or arugula if you prefer)
½ cup cherry tomatoes, halved
½ avocado, sliced
¼ cup shaved Parmesan
Honey Mustard Dressing (makes ~½ cup):
2 tbsp Dijon mustard
1 tbsp honey
2 tbsp plain Greek yogurt
1 tbsp olive oil
1 tbsp lemon juice (or apple cider vinegar)
Pinch of salt & pepper
Directions:
1) Whisk together dressing ingredients until smooth. Set aside.
2) Heat olive oil in a skillet, sauté garlic until fragrant. Add shrimp, season with salt & pepper, and cook 2–3 minutes per side until pink and golden.
3) In a large bowl, toss greens with tomatoes, avocado, and the honey mustard dressing.
4) Top with shrimp and finish with shaved Parmesan.
