Homemade Blueberry Chia Jam PB&J
Your peanut butter toast is about to get a major upgrade. Bonus: Even my pickiest eater loved it!
Ingredients:
• 1 cup blueberries (fresh or frozen)
• ½ cup chopped strawberries (optional, but adds extra sweetness!)
• 1 tbsp lemon juice
• 1–2 tbsp maple syrup or honey (adjust to taste)
• 1 tbsp chia seeds
• Peanut butter
• Toppings: banana slices, fresh strawberries, cinnamon, honey
Directions:
1) In a small saucepan, add blueberries, strawberries, lemon juice, and maple syrup.
2) Simmer over medium heat, gently mashing the berries as they soften (about 5–7 min).
3) Turn off the heat and stir in chia seeds.
4) Let it sit for 10–15 minutes to thicken. Store in the fridge for up to 1 week.
5) Spread onto toast with peanut butter and your favorite toppings—I used bananas, strawberries, a dash of cinnamon, and a drizzle of honey.
