High-Protein Rice Paper Lettuce Wrap (Easy Lunch Idea)

Tip: Don’t over-soak the rice paper—it will continue softening as you build!

Ingredients (1–2 servings)

  • Iceberg lettuce (large outer leaves)

  • 4–5 oz sliced turkey

  • 2 oz sliced ham

  • 1 slice provolone cheese

  • ½ avocado, sliced

  • 1–2 tbsp mayo

  • 1–2 tsp mustard

  • Sweet & spicy pickles

  • 2 rice paper sheets

Instructions

  1. Prep the lettuce

    • Cut off the core and gently peel off large leaves

    • Rinse and pat dry

    • Lay 2–3 leaves overlapping to create a base

  2. Build the sandwich

    • Add turkey and ham

    • Place provolone on top

    • Spread mayo and mustard over the meat

    • Add avocado slices

    • Top with sweet & spicy pickles

  3. Prep the rice paper

    • Dip 2 rice paper sheets in warm water for 5 seconds until just softened

    • Lay them slightly overlapping on a flat surface

  4. Wrap

    • Place the lettuce sandwich in the center

    • Fold like a burrito (tight but gentle)

  5. Serve

    • Slice in half

    • Enjoy immediately
