Garlic Lemon Asparagus Chickpeas
This one-pan side dish is packed with fiber, plant-based protein and tons of flavor!
Ingredients:
1 can (15 oz) chickpeas, drained, rinsed, and patted dry
1 bunch asparagus, trimmed
1–2 tablespoons olive oil
Juice of ½ a lemon
2 cloves garlic, minced (or ½ tsp garlic powder)
Salt and pepper, to taste
Optional: paprika, garlic powder, lemon zest, or Parmesan
Directions:
1) Preheat oven to 400°F (200°C).
2) Dry the chickpeas well with a paper towel and trim the ends off the asparagus.
3) On a sheet pan, toss chickpeas and asparagus with olive oil, lemon juice, garlic, salt, and pepper.
4) Spread into an even layer and roast for 20–25 minutes, shaking halfway through, until chickpeas are crispy and asparagus is tender.
5) Finish with extra lemon juice, zest, or a sprinkle of Parmesan if desired.
