OLIPOP Strawberry Sorbet
Try out this healthy spin on strawberry sorbet!
Ingredients
2 cans of OLIPOP soda (strawberry vanilla flavor works great!)
1/4 cup agave (adjust to taste)
1 cup fresh strawberries, hulled and sliced
3 tbsp water (to help make the strawberry puree)
1 tbsp lemon or lime juice (optional, for added brightness)
Instructions
1. Prepare the strawberries: Blend the fresh strawberries with 3 tbsp of water in a blender or food processor until smooth.
2. Reduce the soda: Pour the OLIPOP soda into a saucepan over medium heat. Allow it to simmer and reduce by half, which will concentrate the flavor (about 10-15 minutes). Stir occasionally to avoid burning.
3. Add sweetness: Once the soda has reduced, stir in the agave until fully dissolved. Taste and adjust the sweetness if necessary.
4. Combine with strawberries: Stir in the strawberry puree and lemon or lime juice (if using) and let the mixture simmer for an additional 2-3 minutes to combine the flavors.
5. Cool: Remove from heat and let the mixture cool to room temperature.
6. Freeze: Pour the mixture into a shallow container and place it in the freezer. Every 30 minutes, stir with a fork to break up the ice crystals, ensuring a smooth, slushy texture. Continue this process for about 3-4 hours or until the sorbet reaches the desired consistency.
7. Serve: Once the sorbet is ready, scoop it into bowls or glasses and enjoy!
