Crispy Smashed Bean Tacos (Plant-Based)
This plant-based meal is loaded with fiber, flavor and is seriously delicious!
Ingredients:
1 can Goya black beans (drained and rinsed)
1–2 tbsp finely chopped onion
1 tsp cumin
1 tsp garlic powder
½ tsp smoked paprika (optional)
Salt and pepper to taste
6 small flour tortillas
Olive oil or avocado oil for the pan
Toppings (optional):
Chopped lettuce
Diced tomatoes
Chipotle mayo
Pickled jalapeños
Cheese (optional)
Hot sauce or lime wedges
Instructions:
1) Mash the Beans: In a bowl, mash the beans with onion, spices, salt, and pepper until thick and spreadable.
2) Smash on Tortillas: Heat a nonstick skillet or griddle over medium heat. Place a tortilla in the pan, add 2–3 tbsp of the bean mixture, and press it down with a spatula.
3) Cook Until Crispy: Cook for 2–3 minutes on one side until golden, then flip and cook another 1–2 minutes.
4) Assemble: Top with your favorite toppings, fold, and enjoy warm.
