Crispy Air Fryer Corn Ribs
This is the ultimate summer snack or side dish!
Ingredients:
2 ears of fresh bicolor corn
1 tbsp olive oil
½ tsp smoked paprika
½ tsp garlic powder
¼ tsp chili powder (or cayenne for heat)
Salt and pepper to taste
Juice of ½ lime
Optional toppings:
Crumbled Cotija cheese
Chopped cilantro
Extra lime wedges
Directions:
1) Prep the corn: Carefully cut each ear of corn in half crosswise if needed for easier handling. Then stand each piece upright and cut lengthwise into quarters using a sharp, sturdy knife. You should end up with long, rib-like pieces.
2) Season: In a bowl, toss the corn ribs with olive oil, paprika, garlic powder, chili powder, salt, and pepper until evenly coated.
3) Air fry: Preheat air fryer to 400°F. Place corn ribs in a single layer and air fry for 10–12 minutes, flipping halfway, until the edges are curled and crispy. (Oven option: Bake at 425°F for 20–25 minutes on a parchment-lined tray.)
4) Top & serve: Drizzle with lime juice and sprinkle with Cotija cheese and chopped cilantro. Serve warm and enjoy!
