Creamy Boursin Protein Pasta
One Pot & Done! This easy, high-protein weeknight dinner is packed with flavor and extra creamy thanks to a little pasta water trick! Banza pasta boosts the protein & fiber while Boursin cheese makes it ultra-satisfying.
Ingredients:
 16 oz Banza pasta (higher in protein & fiber!)
 1 pint grape tomatoes
 1 block Boursin garlic & herb cheese
 2-3 garlic cloves, minced
 1 handful fresh spinach
 Salt, pepper, garlic powder, red chili flakes
 Directions:
 1) Add tomatoes, Boursin cheese, garlic, and spinach to a baking dish. Season lightly.
 2) Bake at 400°F until tomatoes burst and cheese is creamy.
 3) Cook Banza pasta as directed. Before draining, save some pasta water! Then drain and rinse.
 4) Mash the roasted tomatoes & garlic, then mix in pasta and a splash of the reserved pasta water until creamy.
 Serve & enjoy!
