Protein-Packed Blueberry Baked Oats
If you're looking for an easy, make-ahead breakfast, this one’s for you! Packed with over 20g of protein & 5g of fiber, it’s a delicious way to start your day.
Ingredients:
 1 ripe banana, mashed
 2 cups oats
 ¼ cup chopped walnuts
 1 tsp cinnamon
 1 tsp baking powder
 Pinch of salt
 2 eggs
 1 tsp vanilla extract
 2 tbsp maple syrup
 2 tbsp melted butter
 1 ¾ cups milk of choice (Fairlife skim, almond, or whole milk work great!)
 1 cup fresh or frozen blueberries
 Directions:
 1) Mash the banana in a greased baking dish.
 2) Mix in oats, walnuts, cinnamon, baking powder, salt, eggs, vanilla, maple syrup, melted butter, and milk.
 3) Fold in blueberries, then top with a few more.
 4) Bake at 350°F until set.
 5) Slice & store for a quick breakfast all week!
Serving tip: Serve with Chobani vanilla yogurt for extra protein!
