Blended Blueberry Yogurt Bowl
Inspired by the açaí bowls I couldn’t stop eating in Aruba, this version is thick, creamy, refreshing, and way easier than you’d think to make at home. Perfect for a summer breakfast, snack, or healthy treat!
Ingredients (Serves 1):
1/2 cup fresh blueberries
1/2 ripe banana
1/2 cup frozen mango chunks
3/4 cup Greek yogurt (plain or vanilla)
Topping Ideas:
Fresh fruit (like blueberries, banana, or strawberries)
Granola
Hemp hearts (for extra fiber + protein)
Chia seeds, nut butter drizzle, or shredded coconut (optional)
Directions:
1) In a high-speed blender, add the fresh blueberries, banana, frozen mango chunks, and Greek yogurt. Blend until smooth and thick. You can add a splash of water or milk only if needed, but it should be spoonable like a smoothie bowl.
2) Pour into a bowl and top with your favorite toppings like fresh fruit, granola, and hemp hearts. Serve immediately and enjoy!
