Banana Oatmeal Bars
These soft and chewy banana oatmeal bars are naturally sweetened with ripe bananas and made with wholesome pantry staples. They're perfect for breakfast, an afternoon snack, or whenever you need something satisfying with your coffee. Plus, they're kid-approved and come together in just one bowl!
Servings 9–12 bars
Ingredients
2 ripe bananas (about 1 cup mashed)
⅓ cup plain Greek yogurt
⅓ cup natural peanut butter
1 teaspoon vanilla extract
2 cups rolled oats
¼ cup dark chocolate chips, plus 1 tablespoon for topping
Instructions
Preheat your oven to 375°F (190°C).
Line an 8x8-inch baking pan with parchment paper or lightly grease it.
In a large mixing bowl, mash the ripe bananas until smooth.
Stir in the Greek yogurt, peanut butter, and vanilla extract until well combined.
Add the rolled oats and ¼ cup dark chocolate chips, mixing until a thick batter forms.
Press the mixture evenly into the prepared baking pan and sprinkle the remaining tablespoon of chocolate chips over the top.
Bake for 12–15 minutes, or until the center is set and the edges are lightly golden.
Allow the bars to cool completely before slicing into squares.
Storage
Store in an airtight container in the refrigerator for up to 5 days.
Freeze for up to 3 months. Simply thaw overnight in the refrigerator or microwave for 20–30 seconds before enjoying.
