Whipped Feta Toast with Jammy Tomatoes
Perfect when you aren’t in the mood for eggs but still want a delicious, high protein breakfast.
Ingredients:
Jammy Tomatoes
2 cups hothouse tomatoes, chopped or sliced
1 tbsp olive oil
1 small garlic clove, minced
Salt & black pepper, to taste
Whipped Feta
6 oz feta cheese
½ cup plain Greek yogurt (full-fat or 2%)
1 tbsp olive oil
1–2 tbsp lemon juice
For Serving:
Toasted sourdough or whole-grain bread
Fresh herbs (mint, parsley, or dill — whatever you have)
Fresh cracked black pepper
Directions:
1) Make the whipped feta: Add feta, Greek yogurt, olive oil, and lemon juice to a blender or food processor. Blend until smooth, creamy, and whipped. Taste and adjust lemon if needed.
2) Cook the tomatoes: Heat olive oil in a skillet over medium-high heat. Add tomatoes, season with salt and pepper, and cook 4–6 minutes until soft, jammy, and slightly saucy. Stir in garlic and cook 30 seconds until fragrant. Remove from heat.
3) Assemble: Spread a generous layer of whipped feta on warm toast. Spoon the jammy tomatoes over top. Finish with fresh herbs and cracked black pepper.
