Easy Garlic Shrimp Stir-Fry

My go-to budget friendly dinner!

Ingredients:
1 lb raw shrimp, peeled & deveined
1 bag Bird’s Eye Steamfresh broccoli, carrots, snap peas & water chestnuts
1½ tbsp olive oil or avocado oil
3 cloves garlic, minced
1 tsp fresh grated ginger (or ½ tsp ground ginger)
Salt & black pepper, to taste

Simple Stir-Fry Sauce
2 tbsp soy sauce (or coconut aminos)
1 tbsp honey or maple syrup
1 tsp rice vinegar or lime juice
1 tsp toasted sesame oil
Optional toppings:
Red pepper flakes or chili crisp
Scallions
Sesame seeds

Directions:
1) Make the sauce: In a small bowl, whisk together Soy sauce, Honey, Rice vinegar (or lime), Sesame oil. Set aside.

2) Cook the shrimp: Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add shrimp in a single layer. Season lightly with salt & pepper. Cook 1–2 minutes per side, just until pink and opaque. Remove shrimp from pan and set aside (don’t overcook).

3) Stir-fry the veggies: Add remaining ½ tbsp oil to the same pan. Add frozen veggie mix straight from the bag (no thawing). Cook 4–5 minutes, stirring occasionally, until hot and slightly caramelized and any excess moisture cooks off.

4) Add aromatics: Lower heat slightly. Add garlic + ginger. Stir constantly for 30 seconds until fragrant.

5) Bring it all together: Add shrimp back to the pan. Pour in the sauce. Toss everything together for 1–2 minutes, until glossy and evenly coated.

6) Finish & serve: Top with Scallions, Sesame seeds, Chili flakes (if you want heat.) Serve Over rice.
