Tiramisu Chia Pudding

The makeover your breakfast was craving with over 20 grams of protein & 10 grams of fiber!

Ingredients (2 servings)

Chia Pudding:

  • 2 tbsp chia seeds

  • ¾ cup fat-free Fairlife milk

  • 1 tsp instant coffee

  • 1–2 tsp maple syrup

  • ½ tsp vanilla extract

Yogurt Layer:

  • ¾ cup nonfat Greek yogurt

  • 1–2 tsp maple syrup

  • Splash vanilla extract

Topping:

  • Cocoa powder

  • Dark chocolate shavings

Instructions

  1. In a bowl, mix together milk, chia seeds, instant coffee, maple syrup, and vanilla extract.

  2. Stir well, let sit for 5–10 minutes, then stir again to prevent clumping.

  3. Refrigerate for 2–4 hours or overnight until thick and creamy.

  4. In a separate bowl, mix Greek yogurt with maple syrup and vanilla extract.

  5. In a glass or jar, layer the chia pudding and yogurt.

  6. Dust cocoa powder on top and finish with dark chocolate shavings.
