Crispy Pasta Fattoush Salad

The viral crunch pasta you’ve seen on social media with a Middle Eastern twist!

Ingredients (2–3 servings)

Crispy Pasta:

  • 8 oz protein farfalle pasta

  • 1½ tbsp olive oil

  • 1–2 tsp za’atar

  • Pinch salt

Salad:

  • 2 cups chopped romaine

  • 1 cup cucumber, chopped

  • 1 cup cherry tomatoes, halved

  • ¼ red onion, thinly sliced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh mint, chopped (optional but recommended)

Fattoush Dressing:

  • 2 tbsp olive oil

  • Juice of 1 lemon

  • 1 tsp pomegranate molasses

  • 1 small garlic clove, grated

  • 1 tsp sumac

  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions until al dente (slightly firm). Drain and let sit for a few minutes to dry.

  2. Toss the pasta with olive oil, za’atar, and a pinch of salt.

  3. Air fry or roast at 400°F for 12–15 minutes, shaking halfway through, until golden and crispy.

  4. In a large bowl, combine romaine, cucumber, tomatoes, red onion, parsley, and mint.

  5. In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses, garlic, sumac, and salt.

  6. Pour the dressing over the salad and toss to combine.

  7. Add the crispy pasta right before serving and gently toss, leaving some on top for crunch.

Tips

  • Add the pasta at the end to keep it crispy

  • Optional: top with feta or grilled chicken for added protein
