Strawberry Chocolate Chia Pudding

It’s like having chocolate covered strawberries for breakfast but it actually keeps you full!

Ingredients (1 serving)

  • ¾ cup plain Greek yogurt (2% or 5%)

  • ½ cup strawberries (fresh or frozen, thawed)

  • 2 tbsp chia seeds

  • 1 tsp honey or maple syrup

  • 1 tbsp dark chocolate chips (or chopped dark chocolate)

  • ½ tsp coconut oil (optional, for better “crack”)

  • Splash of vanilla extract (optional)

Instructions

1. Blend the base
Add strawberries, Greek yogurt, honey, and vanilla to a blender. Blend until smooth and creamy.

2. Add chia seeds
Pour into a jar or bowl and stir in 2 tbsp chia seeds.

3. Let it thicken

  • Let sit for 10–15 minutes, then stir again (this prevents clumping)

  • Cover and refrigerate for at least 2–4 hours (overnight is best for a thick pudding texture)

4. Make the chocolate shell

  • Melt chocolate with coconut oil (microwave in 20-second intervals, stirring in between)

  • Pour evenly over the chilled pudding

5. Set + crack

  • Refrigerate 10–15 minutes until chocolate hardens

  • Crack with a spoon and scoop
