Strawberry Chocolate Chia Pudding
It’s like having chocolate covered strawberries for breakfast but it actually keeps you full!
Ingredients (1 serving)
¾ cup plain Greek yogurt (2% or 5%)
½ cup strawberries (fresh or frozen, thawed)
2 tbsp chia seeds
1 tsp honey or maple syrup
1 tbsp dark chocolate chips (or chopped dark chocolate)
½ tsp coconut oil (optional, for better “crack”)
Splash of vanilla extract (optional)
Instructions
1. Blend the base
Add strawberries, Greek yogurt, honey, and vanilla to a blender. Blend until smooth and creamy.
2. Add chia seeds
Pour into a jar or bowl and stir in 2 tbsp chia seeds.
3. Let it thicken
Let sit for 10–15 minutes, then stir again (this prevents clumping)
Cover and refrigerate for at least 2–4 hours (overnight is best for a thick pudding texture)
4. Make the chocolate shell
Melt chocolate with coconut oil (microwave in 20-second intervals, stirring in between)
Pour evenly over the chilled pudding
5. Set + crack
Refrigerate 10–15 minutes until chocolate hardens
Crack with a spoon and scoop
