Sheet Pan Mediterranean Beef Kofta Kebabs

Layer salad and pita (or rice) on a plate, add kebabs, drizzle yogurt sauce, and finish with a drizzle of olive oil and parsley for the perfect mediterranean meal!

Ingredients (serves 4)
2 lbs lean ground beef (90/10)
1½ Tbsp olive oil
½ small yellow or white onion, finely grated (squeeze out a bit of liquid if very juicy)
2 garlic cloves, minced or grated
¼ cup fresh parsley, finely chopped
1 Tbsp sweet red pepper paste (or 1 Tbsp tomato paste)
1 tsp cumin
½ tsp smoked paprika
½ tsp oregano
½ tsp salt, ¼ tsp black pepper
Optional: pinch cinnamon or allspice for warmth

Lemon-Garlic Yogurt Sauce
½ cup Chobani Greek yogurt
1 Tbsp Filippo Berio olive oil
1 Tbsp lemon juice
1 small garlic clove, grated
Salt + pepper to taste
1 tbsp of fresh Dill

Directions:
1) Preheat oven to 425°F. Line a large sheet pan with parchment paper.
2) Mix the kebab mixture: In a large bowl, combine beef, olive oil, onion, garlic, parsley, pepper paste (or tomato paste), and all spices. Mix gently — don’t overwork.
3) Shape into 8–10 oval or log-shaped kebabs; place evenly on the pan.
4) Brush lightly with olive oil & bake for 18–22 minutes.
5) Make the yogurt sauce: Whisk yogurt, olive oil, lemon juice, garlic, salt, and herbs until smooth.
6) Serve by layering the salad and pita (or rice) on a plate, add kebabs, drizzle the yogurt sauce, and finish with a drizzle of olive oil and parsley.
