High-Protein Caramel Apple Salad

If you love caramel apples, you need to try this one. This easy apple salad combines creamy Greek yogurt, crisp apples, cinnamon, pecans and granola with a simple homemade date caramel drizzle.

It’s sweet, crunchy, creamy and filling — and the date caramel is what really makes it.

Ingredients

For the Apple Salad

  • ¾–1 cup plain or vanilla Greek yogurt ( I used vanilla) 

  • 1 medium apple, diced into small pieces

  • 1–2 tablespoons chopped pecans

  • 2 tablespoons granola

  • Cinnamon, to taste

For the Date Caramel

  • 4 Medjool dates, pitted

  • About 5 tablespoons milk

  • ¼ teaspoon vanilla extract

  • Small pinch of salt

Directions

1. Make the Date Caramel

If your dates are firm, soak them in hot water for about 5 minutes, then drain.

Add the dates, milk, vanilla and a small pinch of salt to a blender.

Blend until completely smooth and creamy.

The caramel should be thick but still easy to drizzle. If needed, add another small splash of milk and blend again.

2. Assemble the Apple Salad

Add the Greek yogurt to a bowl.

Top with the diced apple and sprinkle with cinnamon.

Add the chopped pecans and granola.

Finish with a generous drizzle of the date caramel.

Serve immediately and enjoy!

Notes

  • I like keeping the peel on the apple for extra color, texture and fiber.

  • Dice the apple fairly small so you get a little apple in every bite.

  • Pecans give this the best caramel-apple flavor, but walnuts also work.

  • The date caramel can be made ahead and stored in the refrigerator. It will thicken as it chills, so stir in a splash of milk if needed before serving.

  • Use your favorite Greek yogurt. A higher-protein variety is an easy way to increase the protein without adding protein powder.
