Apple Cinnamon Oatmeal Cups

These cozy apple cinnamon oatmeal cups are basically baked oatmeal in muffin form. They’re lightly sweet, full of apple and cinnamon, and perfect for an easy grab-and-go breakfast or snack during a busy week.

Ingredients

  • 3 cups old-fashioned rolled oats

  • 1 teaspoon cinnamon

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • 2 large eggs

  • 1 cup unsweetened applesauce

  • 1 cup milk

  • ⅓ cup pure maple syrup

  • 1 teaspoon vanilla extract

  • 1 medium apple, small diced

  • ⅓ cup chopped pecans, optional

For the topping:

  • 2 tablespoons old-fashioned rolled oats

  • 1 tablespoon chopped pecans

  • 1 teaspoon pure maple syrup

  • ½ teaspoon cinnamon

Directions

  1. Preheat the oven to 350°F. Lightly grease a 12-cup metal muffin pan.

  2. In a large bowl, combine the rolled oats, cinnamon, baking powder, and salt.

  3. In a separate bowl, whisk together the eggs, applesauce, milk, maple syrup, and vanilla.

  4. Pour the wet ingredients into the oat mixture and stir until combined.

  5. Fold in the diced apple and pecans, if using.

  6. Divide the mixture evenly between the 12 muffin cups. Make sure each cup gets a good mix of oats, liquid, and apple pieces.

  7. Let the mixture sit in the muffin pan for about 5 minutes so the oats can begin absorbing some of the liquid.

  8. Mix the topping ingredients together and sprinkle a little over each oatmeal cup.

  9. Bake for 22–25 minutes, or until the centers are set and the tops are lightly golden.

  10. Let the oatmeal cups cool in the pan for about 10 minutes before carefully removing them.
