Green Goddess Egg Sandwich
If you love Green Goddess salad wait until you try this!
Ingredients (1 sandwich):
2 Eggland’s Best eggs (sunny side up or scrambled)
2 slices sourdough bread, toasted
¼ avocado, sliced
Handful of spinach
3–4 cucumber slices or sprouts
Herby Greek Yogurt Spread:
2 tbsp plain Greek yogurt
1 tsp lemon juice
½ tsp garlic powder
1 tsp fresh dill
Pinch of salt
Directions:
1) In a small bowl, whisk together yogurt spread ingredients. Set aside.
2) Cook eggs sunny side up (or scrambled, if you prefer).
3) Toast sourdough and spread both slices with herby yogurt.
4) Layer spinach, eggs, avocado, and cucumbers.
5) Top with second slice of bread, cut in half, and enjoy immediately.
Tip: Double the yogurt spread and store in the fridge to use as a dip, wrap spread, or chicken marinade
