Freezer Breakfast Sandwiches (3 Ways)
A week of breakfast made in 20 minutes!
Ingredients (Makes 6 Sandwiches)
6 English muffins
8 eggs
½ cup milk
½ cup cottage cheese
Salt + pepper

Canadian bacon
Turkey sausage patties

American cheese slices
Feta cheese, crumbled
Fresh spinach
Directions
Preheat oven to 375°F.
In a large bowl, whisk together eggs, milk, cottage cheese, salt, and pepper until smooth.
Pour mixture into a greased or parchment-lined baking dish and bake for about 15–18 minutes, or until eggs are set.
Let cool slightly, then cut into 6 squares.
While eggs bake, lightly cook Canadian bacon in a skillet for 1–2 minutes per side until warmed and lightly browned. Cook turkey sausage according to package directions.
Lightly toast English muffins to help prevent sogginess when reheating.
