Freezer Breakfast Sandwiches (3 Ways)

A week of breakfast made in 20 minutes!

Ingredients (Makes 6 Sandwiches)

  • 6 English muffins

  • 8 eggs

  • ½ cup milk

  • ½ cup cottage cheese

  • Salt + pepper

Protein Options

  • Canadian bacon

  • Turkey sausage patties

Cheese & Veggie Options

  • American cheese slices

  • Feta cheese, crumbled

  • Fresh spinach

Directions

  1. Preheat oven to 375°F.

  2. In a large bowl, whisk together eggs, milk, cottage cheese, salt, and pepper until smooth.

  3. Pour mixture into a greased or parchment-lined baking dish and bake for about 15–18 minutes, or until eggs are set.

  4. Let cool slightly, then cut into 6 squares.

  5. While eggs bake, lightly cook Canadian bacon in a skillet for 1–2 minutes per side until warmed and lightly browned. Cook turkey sausage according to package directions.

  6. Lightly toast English muffins to help prevent sogginess when reheating.

  7. Assemble sandwiches:

  • Egg

  • Spinach

  1. Wrap sandwiches individually in parchment paper or foil and store in a freezer-safe bag or container.

Reheating

  • Microwave: 1–2 minutes

  • Air fryer or toaster oven: until warmed through and crispy
