Cottage Cheese Sheet Pan Pancakes
High-protein breakfast meal prep (no protein powder)!
Ingredients (6 servings):
1 ½ cups cottage cheese
5 large eggs
¾ cup plain Greek yogurt
¾ cup oat flour
1 tbsp maple syrup
1 tsp vanilla extract
1 tsp baking powder
½ tsp cinnamon
½ cup blueberries
½ cup dark chocolate chips
Instructions:
Preheat oven to 350°F and line an 8x8 or 9x9 baking pan with parchment paper.
Add the cottage cheese, eggs, Greek yogurt, oat flour, maple syrup, vanilla, baking powder, and cinnamon to a blender.
Blend until completely smooth so you won’t see the cottage cheese curds.
Pour the batter into the prepared pan and spread evenly.
Sprinkle blueberries on one half of the batter and dark chocolate chips on the other half.
Bake for 22–25 minutes, until the center is set and lightly golden.
Let cool completely before slicing into 6 portions for meal prep.

Greek yogurt
Fresh strawberries or berries
Maple syrup or nut butter
