Whipped Cottage Cheese Banana Muffins

Ingredients (Makes 12 Muffins)
Wet Ingredients — Blend These
1 cup Cottage Cheese
2 large ripe bananas (or 3 small)
2 eggs
¼ cup maple syrup
2 tbsp melted butter or coconut oil
1½ tsp vanilla extract
½–1 tsp cinnamon
Optional: 1 tbsp Greek yogurt (extra moisture)

Dry Ingredients
1¾ cups oat flour (blend rolled oats)
2 tbsp flaxseed meal
1 tsp baking soda
1 tsp baking powder
Pinch of salt
Optional Mix-Ins: ½ cup mini chocolate chips

Directions:
1) Blend Wet Ingredients: In a blender, add cottage cheese, bananas, eggs, maple syrup, melted butter, vanilla, and cinnamon. Blend 10–15 seconds until smooth and silky.

2) Combine Dry Ingredients: In a bowl, whisk together oat flour, flaxseed meal, baking soda, baking powder, and salt.

3) Mix the Batter: Pour blended mixture into the dry ingredients. Stir gently until just combined. Fold in chocolate chips, nuts, or blueberries if using.

4) Bake: Preheat oven to 350°F. Divide batter into 12 muffin cups. Bake 18–22 minutes, until golden and they spring back when touched. Cool 10 minutes before removing from tin.
