Cheeseburger Nachos
An easy dinner packed with fiber and protein!
Ingredients:
¾ bag tortilla chips
1 lb lean ground beef
1 can black beans, drained and rinsed
1–1½ cups freshly shredded sharp cheddar cheese
shredded lettuce
diced tomatoes
diced pickles
diced red onion (optional)
Burger Sauce:
¼ cup light mayo
1–2 tbsp ketchup
1 tsp mustard
splash pickle juice
garlic powder
black pepper
Directions:
Preheat oven to 400°F.
Brown the ground beef in a skillet and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Stir in black beans.
Spread ¾ bag of tortilla chips onto a sheet pan and top with the beef mixture and shredded cheese.
Bake for 5–7 minutes until the cheese is melted.
Top with lettuce, tomatoes, pickles, onions, and drizzle with burger sauce.
Serve immediately and enjoy!
