Carrot & Zucchini Ribbon Salad with Sesame Garlic Ginger Dressing

Sweet, savory, tangy, light & ready in 10-minutes!

Ingredients:
1 large zucchini, ribboned with a veggie peeler
1 large carrot, ribboned with a veggie peeler
Pinch of salt
2–3 scallions, thinly sliced
1 tbsp sesame seeds
2 tbsp sesame oil
2 tbsp soy sauce
1 tbsp rice vinegar (or lime juice)
2 garlic cloves, finely grated
1/2–1 tsp fresh ginger, finely grated
Optional: chili flakes or chile crisp for heat
Optional garnish: fresh cilantro or dill

Directions:
1) Use a veggie peeler to shave zucchini and carrots into thin ribbons.
2) Sprinkle ribbons with a pinch of salt and set aside for 5–10 minutes to soften slightly.
3) In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, garlic, ginger, and optional chili.
4) Drain any excess liquid from the veggies, then toss with the dressing.
5) Add scallions and sesame seeds, toss again, and garnish with fresh herbs if desired.
6) Serve immediately for a crisp texture or let marinate briefly for more flavor.
