Nut-Free Banana Chocolate Chip Oat Bars
These soft banana chocolate chip oat bars are an easy make-ahead snack for busy school weeks. They're made without nuts, require just a few minutes of prep, and are perfect for packing in a lunchbox—or eating straight from the pan before they ever make it into one.
The ripe bananas add natural sweetness and keep the bars soft, while oats, egg, and milk give them a little more staying power than a snack made from carbohydrates alone. And yes, we're adding the chocolate chips.

Ingredients
2 large very ripe bananas
2 cups old-fashioned rolled oats
1 large egg
½ cup milk
¼ cup pure maple syrup
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract or paste
1 teaspoon ground cinnamon
1 teaspoon baking powder
¼ teaspoon salt
½ cup mini chocolate chips, divided
Optional: 1 tablespoon ground flaxseed for additional fiber
Directions
Preheat the oven to 350°F. Line an 8×8-inch baking pan with parchment paper or lightly grease it.
Add the ripe bananas to a large mixing bowl and mash well with a fork until mostly smooth.
Add the egg, milk, maple syrup, melted butter, and vanilla. Whisk until combined.
Add the rolled oats, cinnamon, baking powder, and salt. Stir until the oats are evenly coated.
Fold in about ⅓ cup of the mini chocolate chips, reserving the remaining chocolate chips for the top.
Transfer the mixture to the prepared baking pan and spread it into an even layer.
Sprinkle the remaining mini chocolate chips over the top.
Bake for 22–28 minutes, or until the edges are lightly golden and the center is just set. Avoid overbaking so the bars stay soft.
Allow the bars to cool completely in the pan before slicing. This helps them firm up and hold together.
Cut into 9 larger squares or 12 smaller bars and enjoy.
Storage: Store the bars in an airtight container in the refrigerator for up to 5 days. They can also be individually wrapped and frozen for an easy make-ahead school snack.
