Meal Prep Italian Sub Pasta Salad

Ingredients
Salad
1 box Barilla Protein+ Rotini
4 oz turkey pepperoni, chopped
4 oz deli turkey breast, chopped
4 oz deli ham, chopped
6 oz mozzarella pearls, halved
1 pint grape tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
½ cup banana peppers, chopped
4 cups shredded iceberg lettuce
Dressing
3 tablespoons mayonnaise
3 tablespoons red wine vinegar
1 teaspoon Italian seasoning
1 garlic clove, grated
Salt and pepper, to taste
1-2 tablespoons banana pepper juice (optional)
Directions
Cook the pasta according to package directions. Drain, rinse with cold water, and allow to cool completely.
In a small bowl, whisk together the mayonnaise, red wine vinegar, Italian seasoning, garlic, salt, pepper, and banana pepper juice.
In a large bowl, combine the pasta, turkey pepperoni, turkey breast, ham, mozzarella pearls, tomatoes, cucumber, red onion, banana peppers, and iceberg lettuce.
Pour the dressing over the salad and toss until everything is evenly coated.
Divide into meal prep containers and refrigerate until ready to enjoy.
