Loaded Sweet Potato Taco Bowls
This one hits every craving, just right!
Ingredients
4 medium sweet potatoes
Olive oil + salt
1 lb ground beef
1 packet taco seasoning
½ cup water
¾ cup shredded cheddar or cheddar-jack
Shredded lettuce
Pico de gallo
1 avocado, diced
Fage Sour Cream
Hot honey
Instructions
Preheat oven to 425°F. Rub sweet potatoes with olive oil + salt, pierce with a fork, and roast 40–45 minutes until tender.
Brown ground beef in a skillet. Add taco seasoning + water and simmer 2–3 minutes.
Slice sweet potatoes open and fluff the inside with a fork.
Top with taco beef, cheese, pico de gallo, lettuce, and avocado.
Finish with Fage Sour Cream and a drizzle of hot honey.
