Loaded Sweet Potato Taco Bowls

This one hits every craving, just right!

Ingredients

  • 4 medium sweet potatoes

  • Olive oil + salt

  • 1 lb ground beef

  • 1 packet taco seasoning

  • ½ cup water

  • ¾ cup shredded cheddar or cheddar-jack

  • Shredded lettuce

  • Pico de gallo

  • 1 avocado, diced

  • Fage Sour Cream

  • Hot honey

Instructions

  1. Preheat oven to 425°F. Rub sweet potatoes with olive oil + salt, pierce with a fork, and roast 40–45 minutes until tender.

  2. Brown ground beef in a skillet. Add taco seasoning + water and simmer 2–3 minutes.

  3. Slice sweet potatoes open and fluff the inside with a fork.

  4. Top with taco beef, cheese, pico de gallo, lettuce, and avocado.

  5. Finish with Fage Sour Cream and a drizzle of hot honey.
