High-Protein Blended Chia Pudding – 3 Ways
If you love the idea of chia pudding but aren’t a fan of the texture, try blending it! Blending the chia seeds creates a smooth, creamy pudding that honestly feels more like dessert than breakfast.
These three versions are easy to prep ahead and made with Greek yogurt and ultra-filtered milk for 20+ grams of protein per serving, depending on the brands and toppings you use.
Each recipe makes 1 serving.
Strawberry Cheesecake Blended Chia Pudding
Ingredients
3 tablespoons chia seeds
½ cup Fairlife 2% milk
⅓ cup Oikos Pro Vanilla Greek Yogurt
½ cup strawberries, fresh or frozen
1 tablespoon cream cheese, softened
1 tablespoon pure maple syrup
½ teaspoon vanilla extract
Pinch of salt
For topping
Fresh sliced or chopped strawberries
1 tablespoon crushed graham crackers
Optional: spoonful of vanilla Greek yogurt
Directions
Add the chia seeds, milk, Greek yogurt, strawberries, cream cheese, maple syrup, vanilla and salt to a blender.
Blend for about 45–60 seconds, or until smooth and creamy.
Pour into a container, cover and refrigerate for at least 2 hours or overnight. The mixture will thicken considerably as it chills.
Before serving, top with fresh strawberries and crushed graham crackers. Add the graham crackers just before eating so they stay crunchy.
Tiramisu Blended Chia Pudding
Ingredients
3 tablespoons chia seeds
⅓ cup Fairlife 2% milk
¼ cup cooled strong coffee or espresso
⅓ cup Oikos Pro Vanilla Greek Yogurt
1 tablespoon pure maple syrup
½ teaspoon vanilla extract
Pinch of salt
For topping
2 tablespoons Oikos Pro Vanilla Greek Yogurt
Unsweetened cocoa powder, for dusting
Directions
Add the chia seeds, milk, cooled coffee or espresso, Greek yogurt, maple syrup, vanilla and salt to a blender.
Blend for about 45–60 seconds, until smooth and creamy.
Pour into a container, cover and refrigerate for at least 2 hours or overnight.
Once chilled, spread the additional Greek yogurt over the top and finish with a dusting of cocoa powder.
Blueberry Vanilla Blended Chia Pudding
Ingredients
3 tablespoons chia seeds
½ cup Fairlife 2% milk
⅓ cup Oikos Pro Vanilla Greek Yogurt
½ cup blueberries, fresh or frozen
1 tablespoon pure maple syrup
½ teaspoon vanilla extract
Pinch of salt
For topping
Fresh blueberries
1–2 tablespoons granola
Directions
Add the chia seeds, milk, Greek yogurt, blueberries, maple syrup, vanilla and salt to a blender.
Blend for about 45–60 seconds, until smooth and creamy.
Pour into a container, cover and refrigerate for at least 2 hours or overnight.
Top with fresh blueberries and granola just before serving so the granola stays crunchy.
