Gochujang Pork Loin Bites
Take out at home is always a winner!
Ingredients (serves 3–4):
Pork
1½ lbs boneless center-cut pork loin
1 tbsp olive oil
Light sprinkle of salt
Gochujang Sauce
2 tbsp gochujang
2 tbsp honey
1 tbsp soy sauce or tamari
1 tsp rice vinegar or lime juice
2 cloves garlic, grated or finely minced
Optional: ½ tsp sesame oil
To finish (optional)
Sesame seeds
Sliced scallions or chives
Directions:
1) Prep the pork: Cut pork loin into bite-sized cubes (about 1–1½ inches). Pat dry and season lightly with salt.
2) Sear: Heat olive oil in a large skillet over medium-high heat. Add pork in a single layer (work in batches if needed). Sear 2–3 minutes per side until golden and cooked through.
3) Make the sauce: Whisk together gochujang, honey, soy sauce, vinegar or lime juice, garlic, and sesame oil if using.
4) Glaze: Lower heat to medium-low. Pour sauce into the skillet and toss pork until sticky and glossy, about 1–2 minutes. If sauce thickens too quickly, add 1–2 tablespoons water.
5) Finish: Remove from heat and top with sesame seeds and scallions.
