Classic Chicken Noodle Soup
A warm, filling comfort meal!
Ingredients (serves 4–6):
2 chicken breasts
8 cups chicken broth
1 tsp chicken bouillon
3 large carrots, sliced
3 celery stalks, sliced
1 yellow onion, diced
3 garlic cloves, minced
1 tbsp olive oil
1½ cups Brami pasta (or any pasta of your choice)
1 tsp dried oregano
½ tsp dried thyme
½ tsp garlic powder
½ tsp onion powder
Salt + black pepper, to taste
Fresh parsley, chopped (optional)
Juice of ½ lemon (optional but recommended)
Directions:
1) Sauté the vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook 5–6 minutes until softened and fragrant.
2) Add broth + chicken: Pour in chicken broth. Add chicken breasts whole. Stir in oregano, thyme, garlic powder, onion powder, salt, pepper, and bouillon.
3) Simmer: Bring to a boil, then reduce to medium-low and simmer 20–25 minutes, until chicken is cooked through and tender.
4) Shred the chicken: Remove chicken, shred with two forks, and return it to the pot.
5) Add pasta: Stir in 1½ cups pasta and cook 6–8 minutes, just until tender.
6) Finish: Turn off heat. Add parsley and a squeeze of lemon. Taste and adjust seasoning.
