If you're tired of figuring out what to eat every morning, these Cinnamon Roll Blended Overnight Oats are such an easy breakfast to have ready in the fridge!
I loved the creamy texture of my pumpkin pie blended overnight oats so much that I had to try another flavor. This time, we're making cinnamon roll!
The oats are blended with vanilla yogurt, milk, and cinnamon until smooth and creamy, then topped with a sweet vanilla yogurt icing and cinnamon-maple swirl.
They're easy to prep ahead, provide protein and fiber, and taste like a little treat for breakfast. And yes, I added a bit of powdered sugar to the icing because I wanted it to actually taste like cinnamon roll icing!
Prep Time: 5–10 minutes
Chill Time: 2–4 hours or overnight
Servings: 1
Ingredients
For the blended oats:
½ cup old-fashioned rolled oats
½ cup vanilla Greek yogurt or skyr
â…“ cup Fairlife skim milk or milk of choice
½ teaspoon ground cinnamon
ÂĽ teaspoon vanilla extract
1 teaspoon chia seeds
Pinch of salt
For the vanilla icing:
2 tablespoons vanilla Greek yogurt or skyr
1 teaspoon powdered sugar
ÂĽ teaspoon vanilla extract
A small splash of milk, as needed
For the cinnamon swirl:
½ teaspoon maple syrup
ÂĽ teaspoon ground cinnamon
A few drops of milk, if needed
Instructions
Blend the oats. Add rolled oats, vanilla yogurt, milk, cinnamon, vanilla extract, chia seeds, and salt to a blender. Blend for approximately 30–45 seconds, until smooth and creamy.
Adjust the sweetness. Taste the mixture. If you'd like a sweeter base, blend in 1 teaspoon of maple syrup.
Refrigerate. Transfer the mixture into a jar or airtight container. Cover and refrigerate for at least 2–4 hours or overnight to allow the oats and chia seeds to hydrate.
Prepare the icing. In a small bowl, mix the vanilla yogurt, powdered sugar, and vanilla extract. Add a tiny splash of milk until the icing is smooth and spreadable.
Make the cinnamon swirl. In a separate small bowl, mix the maple syrup and cinnamon. Add a few drops of milk only if needed to make the mixture easier to drizzle.
Assemble. Spread the vanilla icing over the chilled oats. Drizzle the cinnamon mixture on top, then use a toothpick or the tip of a knife to gently create a swirl.
Enjoy! Serve chilled for an easy, creamy cinnamon roll-inspired breakfast.
