Broccoli Cheddar Bites
Perfect, dippable bites!
Ingredients
2 cups broccoli florets, steamed and finely chopped
1 cup shredded cheddar cheese
2 large eggs
½ cup breadcrumbs (regular or panko)
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon black pepper
Directions
1) Steam broccoli until tender. Drain well and finely chop.
2) Mix broccoli, shredded cheddar, eggs, breadcrumbs, and seasonings in a bowl until combined.
3) Shape into small bites or patties (about 2 Tbsp each).
4) Bake on a parchment-lined sheet at 400°F (200°C) for 18–20 minutes, flipping halfway, until golden brown.
5) Serve warm with your favorite dip (ranch, marinara, or Greek yogurt dip).
