If you love pumpkin pie, you're going to love these blended pumpkin pie overnight oats! They're thick, creamy, and taste like pumpkin pie filling, but they're also an easy, protein-packed breakfast you can prep ahead of time. Just blend everything together, refrigerate, and breakfast is ready to grab in the morning. No protein powder needed!
Prep Time: 5 minutes
Chill Time: 2–4 hours or overnight
Servings: 1 generous serving
Ingredients
For the overnight oats:
½ cup old-fashioned rolled oats
⅓ cup 100% pumpkin purée
½ cup vanilla Greek yogurt or skyr (I used Siggi's vanilla)
â…“ cup Fairlife skim milk or milk of choice
½ teaspoon pumpkin pie spice
ÂĽ teaspoon vanilla extract
Pinch of salt
1–2 teaspoons maple syrup, optional, to taste
For the toppings:
2–3 tablespoons vanilla Greek yogurt or skyr
½–1 graham cracker sheet, crushed
1 teaspoon chopped pecans
Sprinkle of cinnamon
Directions
Blend the ingredients. Add the rolled oats, pumpkin purée, vanilla yogurt, milk, pumpkin pie spice, vanilla extract, and salt to a blender. Blend for 30–45 seconds, or until completely smooth and creamy.
Taste and adjust. Taste the mixture and add maple syrup if you'd like extra sweetness. If it's too thick, add 1–2 tablespoons of milk until you reach your desired consistency.
Transfer and refrigerate. Pour into a glass jar or airtight container. Cover and refrigerate for 2–4 hours or overnight to allow the oats to hydrate and the mixture to thicken.
Add the toppings. When ready to serve, spread the additional vanilla yogurt over the oats. Top with crushed graham crackers, chopped pecans, and cinnamon.
Enjoy! Serve chilled or grab it from the refrigerator for an easy, make-ahead breakfast.
Recipe Notes
Meal prep: Store covered in the refrigerator for up to 3–4 days. Add the toppings just before serving.
Yogurt options: I used vanilla skyr, but vanilla Greek yogurt works well, too. Protein and sweetness will vary by brand.
Milk options: Fairlife skim milk adds extra protein, but you can use regular dairy milk or unsweetened almond milk.
Blended vs. regular: Prefer traditional overnight oats? Skip the blender and stir the ingredients together instead.
